This salad is typical throughout Catalonia, and ingredients can vary depending on the area depending on the ingredients available in each house or the season. The charcuterie products should be home-made. They can be bought in advance and kept in the larder.
The lettuce and curly endive are washed, drained well and broken into small pieces using your fingers.
Peel the onion, warm it in your hands and add a splash of water, salt and vinegar so that it loses its bitterness, then drain well.
Cut the tomato and place all the vegetables together on a platter before adding the black olives and pickled broccoli.
The sausages and cold meats are laid out next to the salad. (They are placed apart so that they do not take on the taste of the salad dressing.)
