Pears with Wine
This is a dish that can be served as a dessert or accompaniment. White wine or vi ranci (fortified wine) may be used instead of red wine. If possible, pears ripened in May or June should be used, or alternatively the dish can be prepared with apples.
Place the pears, water, sugar, red wine, cinnamon and grated lemon peel in a pot.
When it starts to boil, the pears have to cook slowly until they are soft.
As soon as the pears are cooked they are removed. The rest is left until the alcohol has evaporated and the liquid has become denser.
The pot is removed from the heat and the pears are returned to it.
Once cooled, it is ready to serve.
